Any Indian festival is incomplete without Kheer. “Kheer” in Hindi denotes sweet pudding commonly referring to Rice Pudding. Kheer finds its way into the menu for any celebration, any traditional function and , even day to day entertaining . So I thought why not give this classic dessert a twist. I am presenting here my version of chocolate kheer or Chocolate Rice PuddingDSC_6511

To make Chocolate Kheer you will need

Ingredients

  • ½ cup Dark Chocolate
  • 2  ½ cup Milk
  • 1 Tablespoon of Rice
  • ½ cup White Chocolate Chips
  • 2 Tablespoon Sugar
  • Cashews for garnishing
  • Chocolate Shavings for garnishing

Steps

  1. Heat 2 cups of milk in a deep non stick pan. Add  rice and cook till completely soft. Stir continuously till milk is reduced. This process may take around 20-25 minutes. TO make this quick you can use already cooked rice and evaporated milk. I prefer the longer version though as slow cooking the rice with milk gives it a rich flavor but when I am short of time I use cooked rice and evaporated milk to prepare instant Kheer.photo 2
  2. Once rice is fully cooked add sugar and mix well. I am using only 2 Tbsp of sugar as I am also adding chocolate to the kheer and I prefer mildly sweet kheer but you can add more if you like.photo 2(1)
  3. Add white chocolate chips and mix well. Turn off the heat and let it cool.photo 3(1)
  4. Keep a bowl of dark chocolate in microwave and melt for 1 minute stirring at an interval of 30 seconds. Once the chocolate melts add the remaining ½  cup milk and form chocolate sauceChocolate Mousse with Apple (16)
  5. Put a little of this chocolate sauce into each serving glass.photo 5(1)
  6. Pour the kheer and garnish with chocolate shavings and cashew
