What could be a more perfect, more delicious side dish than these easy-to-make Sweet Potato Fries. These fries are a huge hit at our table, with adults and children alike. This is a great way to eat your vegetables! It is so quick and easy that anyone can make these at home in minutes. Just make sure you buy sweet potatoes and not yams!

The recipe for these baked fries is simple and these are healthier than your average fry, as they are oven roasted with olive oil, and not deep fried. These baked sweet potato sticks are a great substitute when you want the flavor of fries without the deep-fry effect on your health. With this recipe in your kitty, you will have one crowd pleasing treat which will become your kids’ new favorite side dish or snack. A heaping plate of these babies will make anyone smile!

 Ingredients

  • 2 large sweet potatoes
  • 2-3 tablespoon corn starch
  • ¼  tsp cayenne pepper
  • ¼ tsp crushed black pepper
  • 2 cloves of garlic finely crushed (or you can also use  1 tsp of garlic powder)
  • 1 tbsp olive oil
  • Few sprigs of finely chopped parsley

Steps

  1. Preheat the oven to 425 degree
  2. Peel and cut sweet potatoes into fries no thicker than 1/2″.  Soak in water for minimum of one hour
  3. Drain water from bowl and lift fries out by the handful.  Give them a good shake.  They should be dry but still have enough moisture on them to allow the cornstarch to stick.
  4. Put cornstarch in a plastic bag and drop all of your fries in.  Blow a little air into the bag, twist the top and shake it vigorously.
  5. In a bowl add salt, black pepper, cayenne pepper, garlic and chopped parsley. Add the sweet potato and coat them properly
  6. Coat with Olive Oil. Use 2 pans if you have to.  You want to make sure the fries aren’t crowded on the pan otherwise they’ll steam as opposed to getting crispy.
  7. Bake them for 15 minutes then flip the fries and bake for 5-10 minutes more till the fries are crispy
