Cauliflowersoup

It is cold !! Actually cold would be an understatement. With temperatures going in negatives, the prospect of spring won’t be enough to keep us from shivering for the next few months. We need something warm and comforting like a wool blanket  and something hot to make us feel warm and cozy 🙂 .

The answer is a bowl of Hot Soup.  So here is my recipe for a hot and filling Cream of Cauliflower Soup with Herbs which will help you beat this brisk weather and make the long wait for Springtime enjoyable.DSC_6974

Cauliflower is one of my favorite veggies and I like it in all forms, be it roasted, baked or stuffed in flatbreads and this Cream of Cauliflower is one of my go to comfort food for dead cold winter nights.Cauliflowersoup1

To make this Cream of Cauliflower Soup with Herbs you will need  the following :-

Ingredients

  • 1 Head of Cauliflower cut roughly
  • 2 shallot (or 1/2 onion) finely chopped
  • 3 garlic cloves chopped
  • 1 tbsp mixed nuts like coarsely crushed pecans, walnuts and pine nuts
  • 1 small bay leaf
  • 1 cup milk
  • ½ cup cream
  • 1 cup water
  • 1 tbsp chopped mixed herbs (dill, chives and cilantro or coriander leaves)
  • 2  tbsp olive oil
  • Salt and black pepper to taste

Steps:

  1. Heat 1 ½ tbsp of oil in a pan , add the chopped garlic and sauté till it get slightly golden. Then add the chopped shallots and fry.
  2. Now add the cauliflower florets and fry.
  3. Add a cup of water and bay leaf and bring it to boil. When the cauliflower get a little soft and mushy, turn off the heat and let it cool.
  4. Once the cauliflower are at room temperature, discard the bay leaf and transfer it to a blender and make a puree.
  5. Heat the remaining oil in a pan and add the cauliflower puree to the pan.
  6. Add milk and brink it to a boil. Add the mixed nuts, black pepper and salt and mix well
  7. Add cream and finely chopped herbs and cook for another minute and your hot cream of cauliflower soup is ready.  DSC_6975
