Paneer Jhalfrezi
I love food which are colorful, what I mean is not the ones which are loaded with artificial synthetic colors but the vibrant and beautiful natural colors rendered in a dish by colorful vegetables. And one of such dish to top my list of colorful food is Paneer Jhalfrezi. It is a delicious mélange of paneer (Indian Cheese) and vegetables like colorful peppers or capsicum. This dish is a myriad of melt in the mouth soft Paneer and the flavorful crunch of the bell peppers. Paneer Jhalfrezi is a sure crowd pleaser which is also quick and easy to make.
To make Paneer Jhalfrezi you will need the following
Ingredients
200 gms Paneer (Indian Cheese) cut into long strips
1 teaspoon of cumin seeds
1 medium onion, cut into long thin strips
2 cups mixed bell peppers cut into strips ( I have used Red ,Green Yellow Peppers or Capsicum)
1 tomato cut into long thin strips
¼ teaspoon turmeric powder
1 inch ginger cut into juliennes
½ cup tomato ketchup
1 teaspoon of Vinegar
½ teaspoon Garam Masala Powder
¼ teaspoon red Chilli powder
½ teaspoon Coriander Powder
2-3 dried red chillies
1 tablespoon oil
Salt to taste
Steps
- Heat oil in a non stick pan. Add cumin and dried red chillies and sauté till cumin seeds are brown. Add onion to the pan and sauté for 2 mins
- Now add the ginger juliennes and toss. Add the bell peppers (capsicum) to the pan and toss again.
- Now add the tomatoes and mix well
- Add the spice mix( red chilli powder, turmeric, and coriander powder) and toss so that the spices get mixed well
- Add vinegar and toss again
- Now add the tomato ketchup mix well and cook for a minute
7. Finally add the Paneer, salt and garam masala and give it a mix. Make sure that you are gentle while mixing else you will break the paneer. Garnish with chopped cilantro (coriander leaves) and serve hot.
Paneer Jhalfrezi is a delectable side dish for Roti (Indian bread)as well a filling for wraps.
