ParleG Cake 2So this past weekend it was my dear hubby’s birthday and I wanted to make it extraordinary for him. Though I did order him a custom made gift online but I also wanted to make it special with a unique cake and his favorite dishes. But being 38 weeks pregnant at the moment I did not have the energy or motivation to make everything from scratch or to stand hours in front of the oven mixing and beating the eggs and flour to make that perfect moist cake.ParleG Cake3

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

So I had to come up with a quick and beautiful cake recipe (not the 5 min cake in mug type recipes). I searched through my pantry and saw that I had many packets of our favorite Parle G biscuits (popular Indian cookie) and remembered how my mom used to make this Parle G biscuit cake so I thought why not give it a try?  It only takes 5 minutes to bake and there is No Need for an Oven. You can make this in your microwave in 5 mins. Also this cake is Eggless!

Yes this cake is indeed very special because not only it can be made under 10 mins from start to finish, it does not require an oven , you can make it in your microwave or even the pressure cooker and it is eggless.

To make this super quick cake which can be made in microwave you would need the following ingredients (for a single 8 inch layer of cake)

Ingredients

  • 1 and ½ pack of Parle G Biscuit. (150 gm pack)
  • 3 ½ Tbsp of Cocoa Powder
  • ½ cup sugar
  • 1 and ½ cup  of milk
  • 1 packet of Eno fruit salt (plain non flavored)

Optional Ingredients

  • ½ cup chocolate chips or ½ cup chopped walnuts
  • Butter cream frosting
  • Few chocolate chips for decorating the cake
  • Fresh cut strawberries

The Ingredients mentioned above are for an 8 inch single layer of cake. I doubled the recipe to make to layers so as to make it look better.

Steps:

  1. In a blender add the biscuits, cocoa powder  and sugar and blend them together to form a smooth powder. Make sure everything is mixed together.
  2. Put the biscuit powder mix into a large bowl and add milk little by little so as to make sure that there is no lumps.
  3. Once the batter is ready add the chocolate chips or walnuts if desired.
  4. Grease your microwave safe pan with butter.
  5. Add eno to your batter and give it a gentle mix and then pour it into your greased pan.
  6. Microwave it for approx 5 minutes (time may defer depending upon your microwave power so check with a toothpick)
  7. The next step is decorating your cake. You can either make two cake layers and cover them with butter cream frosting and chocolate chips like I have done or you can just make a single layer and then dust some icing sugar on the cake and top it with nuts or fresh cut strawberry.  Use your imagination to decorate your cake.
