Vermicelli Upma /Semiya Upma
Nothing makes you happier than a delicious breakfast in bed on a weekend. It can only get better if that breakfast has been made by your hubby 🙂 🙂
So I woke up this Saturday to find a delicious breakfast spread out(courtesy my sweet hubby). The aroma from Vermicelli Upma and hot ginger tea started my weekend on a very relaxing and delicious note. As soon as I had the first bite of the Vermicelli Upma I knew that this recipe had to go on my blog. I hope I will have many more such weekends when I can just relax and enjoy a meal made just for me by my dear husband 🙂
To make Vermicelli Upma or Semiya Upma you will need
Ingredients
- 1 small sized Onion finely chopped
- 1 Tomato finely chopped
- 1 cup of mixed vegetables (Carrots, Green Peas, corn and beans)
- 1 inch piece Ginger (finely chopped)
- 8-10 Curry leaves
- 1 tsp of mustard seeds
- Pinch of asafetida (Hing)
- ½ tsp of turmeric powder
- ¼ tsp of red chilli powder (Cayenne Pepper)
- 1 tbsp of oil
- 2 tsp of lemon juice
- Salt to taste
- Mint leaves (for garnishing)
Steps:
1.In a pan heat around 1 tsp of oil. Add vermicelli / sevai and roast till they get a nice golden color. Remove from pan and set aside.
2. In the same pan add remaining oil. Add mustard seeds and curry leaves and let them splutter.
3. Now add the green chillies, ginger, asafetida and onions. Saute till onions get translucent.
5. Now add the vegetables, red chilli powder (cayenne pepper), turmeric, salt and mix well. Cook for 4-5 minutes. (or till the vegetables are soft.)
6. Now add the roasted vermicelli and mix well
7. Add about 2 cups of water, cover and let it simmer till all the water is absorbed.
8. Sprinkle some lemon juice, garnish with fresh mint leaves or cilantro and serve hot
